Chicken brinjal curry maslaysian style
 Ingredients:
Chicken boneless ½ lg
Medium sized onions 2
Brinjal 2
Fresh red chilies 2-3
Chicken stock 1 cup
Oil ½ cup
Ginger 1 medium sized
Garlic 3-4 cloves
Coconut milk 200 ml
Turmeric 1 tsp
Lemon grass 1 tsp
Tamarind paste 1 tsp
Red chili powder 1 tsp
Black pepper ½ tsp
Cumin powder ½ tsp
Coriander powder ½ tsp
Salt to taste
Method:
1. Heat ¼ cup of oil add 1 medium sized piece of ginger, 3-4 garlic cloves, 2 medium sized onions, and cook till it softens.
2. Add ½ kg chicken, 1 tsp lemon grass, 2-3 fresh red chilies, 1 tsp turmeric, 1tsp tamarind paste, salt to taste, ½ tsp black pepper, 1 tsp red chili powder, ½ tsp cumin powder and ½ tsp coriander powder and cook for 2 minutes.
3. Add 200 ml coconut milk, 1 cup chicken stock, cover the pan and cook for 8-10 minutes on low flame.
4. Cut brinjals in ¼ inch sized pieces of rings.
5. Fry them in the oil. As it gets golden brown take them out and keep aside.
6. Remove the lid add brinjals and sauté.
7. Now fry onion till it gets brown.
8. Remove chicken and place it on a platter. Garnish it with fried onion and serve with boiled rice.

Chicken five flavor noodle


Chicken five flavor noodle
Egg noodles ½ packet
Julienne chicken breast 2
Julienne capsicum 1
Julienne red capsicum 1
Sliced spring onions 1
Bean sprouts 1 cup
Finely chopped garlic 3 cloves
Chinese cabbage ¼
Finely chopped mint leaves ¼ bunch
Finely chopped ginger 1
Brown sugar 1tsp
Black pepper powder 1/2tsp
Worcestershire sauce 2tbsp
Soya sauce 2tbsp
Oyster sauce 2tbsp
Oil 3tbsp
Salt as required

Method:-
Julienne cut the two chicken breasts.
Boil half a packet of noodles, drain and keep aside.
Julienne cut the Chinese cabbage, capsicum 1 red capsicum and spring onions.
Heat 3tbsps oil in a wok add 1 finely chopped piece of ginger and 3 cloves of garlic. Fry for a few minutes add the julienne chicken and cook for 2-3 minutes until tender.
Now add 2tbsp oyster sauce.2tbsp soya sauce,2tbsp Worcestershire sauce and 1tsp brown sugar .Cook for 1-1 ½ minutes
Add all the julienne cut vegetables .1 cup bean sprouts, salt as required,1/2tsp black pepper powder and finally the boiled noodles. Toss well and increase the flame

Sesame fried chicken

Sesame fried chicken
 Chicken breast ½ kg
Whisk egg 1
Corn flour 1 cup
White sesame 2 ounce
Red chili powder 1 tsp
Salt 1 tsp
Soya sauce 1 tbsp
Black pepper ½ tsp

Method:
Clean the chicken fillet and put salt and soya sauce to mix. In corn flour, mix red chili powder, black pepper and sesame. Now dry the chicken pieces and dip it in egg and coat it with white flour mixture. In a non stick pan heat little oil and fry chicken from both sides. Serve it with salad.

Chicken with walnuts

Chicken with walnuts
 Walnuts 4 ounce
Onion 1
Capsicum 1
Chicken stock 1 cup
Boiled chicken 12 ounce
Sugar 1 tsp
Soya sauce 1 tbsp
Corn flour 1 tbsp
Chinese salt ½ tsp
Parsley chopped as required

Method:
Heat oil in a pan and fry walnuts to make crisp and take it out. Cut onion and capsicum in dices. In a bowl add chicken stock, 1 tsp of sugar, 1 tbsp of soya sauce, 1 tbsp of corn flour and ½ tsp of Chinese salt to mix. Now add chicken and vegetables in the mixture to cook and switch off the flame when it’s become thick. Now boil rice in salty water and dry it and fry it in a wok with 1 tbsp of oil. Now add parsley in rice. Now dish it out and pour vegetable and chicken mixture in the center and garnish it with walnuts and serve.

Chicken with pineapple

 Boneless chicken ½ kg
Egg 1
Ginger I inch
Capsicum 2
Green chillies 4
Pineapple 6 slices
Oil 3 cup
Sugar 1/3 cup
Vinegar ½ cup
Corn flour ½ cup
Tomato ketchup 3 tbsp
Corn flour 3 tbsp

Method:
First hammer the chicken with mallet and cut it in pieces. Now cut capsicum in dice with 4 green onion and 6 slice of pineapple. Then in a bowl add ½ cup of sugar, ½ cup of vinegar, 2 tbsp of corn flour, 3 tbsp of tomato ketchup, ½ cup of water and ginger to mix. Now whisk egg and dip chicken in it and coat it in corn flour. Heat 3 cup of oil and fry the chicken pieces. Now take 2 to 3 tbsp of oil from wok and heat it to fry capsicum and green onion and add soya sauce mixture. Now dissolve corn flour with water and add in chicken to make it thick. Now add pineapple to cook and serve it hot.

Sweet n sour soup

Sweet n sour soup
 Chicken boneless 250 gm
Cabbage ½
Chinese salt 1 pinch
Carrot 1
Chicken cubes 2
Egg 2 to 3
Green chilies 3 to 4
Garlic 4 to 5 cloves
Green onion 2 to 3 sticks
Black pepper crushed 1 tsp
White pepper powder ½ tsp
Vinegar 2 tbsp
Corn flour 2 tbsp
Brown sugar 2 tbsp
Soya sauce 2 to 3 tbsp
Chili sauce 2 to 3 tbsp
Ketchup 2 to 3 tbsp
Lemon juice 2 to 3 tbsp
Oil 2 to 3 tbsp
Salt to taste
Method:
Whisk 2 to 3 eggs with salt to taste and fry omelet and chopped it. Heat 2 to 3 tbsp oil and fry 4 to 5 garlic cloves and add 250 gm chicken to fry it. Now add 3 to 4 green chilies, 2 to 3 green onion, ½ cabbage, 1 carrot, 2 to 3 tbsp soya sauce, 2 tbsp vinegar, 2 to3 tbsp chili sauce, ½ tsp white pepper powder, 1 tsp black pepper crushed, 2 to 3 tbsp ketchup, 2 to 3 tbsp lemon juice, 2 tbsp brown sugar, 1 pinch Chinese salt and salt to taste to mix. Then add 2 chicken cubes in as required water and cook. When it starts to boils, dissolve 2 tbsp corn flour in water and add in soup and stir it. When it turns thick mix chopped omelet and dish it out to serve.

Chicken and crunchy vegetable

 Ingredients
Chicken boneless 250g
Cauliflower ½
Sliced cucumber 1
Sliced cucumber 2
Chinese salt a pinch
Tomato sauce 1cup
Green chilies 2-3
Crushed black pepper 1/2tsp
Finely chopped ginger garlic 2tbsp
Worcestershire sauce 2tbsp
Vinegar 2-3tbsp
Soya sauce 2-3tbsp
Oil 2-3tbsp
Salt as required

Method:-
1. Cut the chicken into thin strips
2. Heat 2 -3 tbsp oil in a pan and sauté 2tbsp of finely chopped ginger garlic
3. Add the chicken strips and fry till the color changes to a golden brown
4. Add 1 cup tomato sauce and mix well. Then add 2-3tbsp vinegar,2tbsp Worcestershire sauce ,1/2tso crushed black epepr,2-3tbsp soya sauce,1 pinch Chinese salt and salt as required
5. Cook until the oil forms a separate layer on top. Add the sliced cucumber, cauliflower florets, sliced capsicums, and 2-3 chopped spring onions.
6. Mix well and serve.
